Crust Ingredients:

  • 2 tablespoons unsalted butter
  • 2 graham cracker sheets , crushed

Filling Ingredients:

  • 4 ounces cream cheese , softened
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 large egg yolk , beaten
  • 2 tablespoons strawberry jam


  • Melt the butter for 30 seconds to 1 minute, in a cereal bowl.
  • Mix in the graham cracker crumbs and pat them down into a crust.
  • Microwave on half power (50% power) for 1 minute 30 seconds.
  • In a cup or a second bowl, mix the cream cheese, sour cream, vanilla, sugar, and egg yolk with a fork.
  • Pour it onto the crust then add in small dollops of your strawberry jam.
  • Using your fork swirl the strawberry jam just a bit.
  • Microwave for 2 minutes 30 seconds on 50% power.
  • Put in the refrigerator until well chilled.
