- 3 tablespoons quinoa rinsed
- 1/2 cup water
- 1/2 can diced tomatoes
- 2 tablespoons diced green chilis
- 1 cup canned seasoned chili beans , with juice
- 1/4 teaspoon salt
- 1 pinch black pepper
Combine quinoa, salt, pepper and water in a mug, then microwave on high for 4 minutes.
Stir and Microwave on high for 3 minutes.
Stir in tomatoes, green chilis, and beans, then microwave for 2 minutes or until heated through.
Cover the mug with a small plate and let sit for 1 minute.
Season with salt and pepper to taste.
