- 1/4 cup flour
- 1/4 cup cornmeal
- 1 teaspoon baking powder
- 1/4 teaspoon salt , 1 packet
- 1/4 cup whole milk , or evaporated milk
- 1 large egg white
- 1 tablespoon vegetable oil
- 1 tablespoon honey
Combine flour, cornmeal, baking powder and salt in a cereal bowl.
In a separate bowl, beat the egg white until foamy and then add the milk, oil, and honey.
Add the wet ingredients to the dry and stir until just combined.
Pour cornbread mixture into the cereal bowl.
Microwave for 1-2 minutes, until top is dry and cornbread is fluffy.
