Ingredients

  • 1/4 cup flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt , 1 packet
  • 1/4 cup whole milk , or evaporated milk
  • 1 large egg white
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey

Instructions

  • Combine flour, cornmeal, baking powder and salt in a cereal bowl.
  • In a separate bowl, beat the egg white until foamy and then add the milk, oil, and honey.
  • Add the wet ingredients to the dry and stir until just combined.
  • Pour cornbread mixture into the cereal bowl.
  • Microwave for 1-2 minutes, until top is dry and cornbread is fluffy.
