MICROWAVE PITA PEPPERONI PIZZA
It’s been a long week, and you desperately want to just chill with some friends, have a brew or two and eat a pizza. However, you have just enough energy left to make something delicious and homemade for everyone. Good news, you can make delicious and highly shareable gourmet Pita Pizzas in only about 5 minutes. You can even chop up extra ingredients and set them aside for some fun customizations.
WHAT TO SERVE WITH QUICK AND EASY PITA PIZZA
Pizza is one of those foods that everyone likes to eat their own way. Some people enjoy pizza with a glass of milk, others like pizza with beer, and still, others enjoy dunking theirs in chocolate sauce.
Okay, so we made that last one up, but could you imagine? Anyway, a classic pizza pairing to try out is garlic bread. Either buy yourself some rolls from the store, add olive oil and crushed garlic and toast the whole thing, or reheat the breadsticks you Brought home from your last date. Either way, you can’t mess with a classic.
There is one trick to making this pizza in your microwave instead of needing a toaster oven.

STALE BREAD. Yep, if you buy these pita flatbreads and use them fresh your pizza will be super soggy. But if you buy the flatbreads and leave them out of the bag for 1-2 days to get stale, then the microwave will soften them up just enough to have a chewy pizza style crust.
Yep, sorcery.
VARIATIONS ON QUICK AND EASY PITA PIZZA
- Toppings: Chop up additional ingredients, like fresh bell pepper, mushrooms, onions, pineapple (if you’re one of those strange people that likes pineapple pizza), olives, or even anchovies (ugh, no, actually don’t.) You can add them on the pizza when it’s cooking, or set them aside for later and set up a build-your-own pizza station.
PLATE IT UP
Set out the Pita Pizzas on a plate and arrange your toppings on top. You can even get a little fancy and put out plates of additional toppings on the side in case you or your friends want to add more.

SAVE SOME FOR LATER
Put the remaining pita pizzas into an airtight container or a sealable bag and put them in the fridge. They’ll stay good until the next day when you want to heat them up, but probably not much longer. The problem with keeping your Pita Pizzas in the fridge for longer than about a day is that the pita bread tends to get a bit soggy.

$: All you need are pita bread, cheese, and marinara sauce. You can find everything you need at the grocery store, and you will stay well within the weekly budget. You can even get a little fancier with your supplies and get high-end ingredients without breaking the bank.
Microwave Pepperoni Pita Pizza
Ingredients
- 1 pita bread , stale (leave out overnight)
- 2 tablespoons pizza sauce , , or pasta sauce
- 1/2 cup mozzarella cheese
- 8 slices pepperoni
- 1/4 teaspoon garlic salt
Instructions
- Add marinara sauce to pita bread and spread evenly (leave 1/2" for crust)
- Top with mozzarella, pepperoni slices and garlic salt.
- Microwave for 1 minute.
