MICROWAVE CHEESY BEEF LASAGNA

So it’s rainy or snowy out, the temperature’s way too low, you’re all cuddled up in that super fluffy blanket that you love, but you’re so hungry. You don’t need to brave the cold and sleet to get a hot meal, you can make yourself a heaping bowl of Cheesy Beef Lasagna in the comfort of your microwave. 

You can also make Cheesy Beef Lasagna when you’re trying to figure out what to bring to your study group’s all night finals cramming session pot luck (we assume that’s a thing. If it isn’t, you go ahead and make it a thing.) This Lasagna travels well, it’s great reheated, and it’s filling enough to keep your stomach happy while your brain does all the work. 

HOW TO MAKE MICROWAVE CHEESY BEEF LASAGNA

  1. Mix ricotta, parmesan, salt, and pepper in a small cup.
  2. Spread 2 tablespoons of marinara sauce in the bottom of a cereal bowl.
  3. Top with 1 sheet of lasagna noodles broken apart.
  4. Top with 1/3 of the meat, 1/3 of the ricotta mixture, along with 2 more tablespoons of sauce, and 2 tablespoons of mozzarella cheese.
  5. Repeat with 1 sheet of lasagna noodles broken apart.
  6. Top with 1/3 of the meat, 1/3 of the ricotta mixture, along with 2 more tablespoons of sauce and 2 tablespoons of mozzarella cheese.
  7. Repeat with 1 sheet of lasagna noodles broken apart.
  8. Top with 1/3 of the meat, 1/3 of the ricotta mixture, along with 2 more tablespoons of sauce and 2 tablespoons of mozzarella cheese.
  9. Repeat with the last sheet of lasagna noodles broken apart.
  10. Top with remaining tomato sauce and mozzarella cheese.
  11. Cover with a wet paper towel and microwave for 7-8 minutes.

WHAT TO SERVE WITH CHEESY BEEF LASAGNA

This is the perfect time to heat your takeout garlic bread from the last pizza you ordered. They are delicious dunked in the sauce, and you can use them to mop up whatever gets leftover once the noodles are gone.

VARIATIONS ON CHEESY BEEF LASAGNA

  • Toppings: This is a cheesy dish, so you can experiment with different kinds of cheeses on top. Don’t you dare use Easy Cheese, but you can try out any kind of Italian table cheese you want? 

PLATE IT UP

This dish involves a lot of marinara sauce, so done wrong it can resemble a crime scene. Take it out of the microwave and dust the top with some parmesan cheese. If you’re feeling super fancy, you can use pecorino cheese or any other hard table cheese. If you have any basil, dust the top and you’ve got yourself a 5-star dinner.     

SAVE SOME FOR LATER

Okay, so you’ve eaten as much as you can and want to save the rest. This is a very forgiving meal to reheat, so you’ve got tomorrow’s dinner covered. Just put whatever’s left into a sealable bag and put it in the fridge. As long as no excess moisture gets into it, the Lasagna will last up to 3 days. Don’t eat it cold. I’m sure it’s medically fine, but you’re better than that. 

COST FACTOR

$$: Depending on where you shop for your groceries. This can get a little bit expensive. Before you panic though, Lasagna famously lasts well int he fridges and is easy to reheat, so you can get at least two dinners out of this.  

MICROWAVE TABLE

  • 1,000 watts or higher: Higher wattage, lower cook time. Our microwave is about 1,250 watts, but if you have one with about 1,000 watts you will want to cook for about 8:24 to 9:36.
  • 700 watts: Microwaves under about 900 don’t heat things evenly or consistently, so don’t go anywhere while you’re cooking. Cook for 12 to 13:43, but keep an eye on it.

  • Top with remaining tomato sauce, water and mozzarella cheese.
  • Cover with a dripping wet paper towel and microwave for 5 minutes.
  • Let sit for 2 minutes, then microwave for another 5 minutes.
  • Let sit for 2 minutes, if the top noodle is not fully cooked, microwave an additional 5 minutes, be sure to add 3 more tablespoons of water on top.
