MICROWAVE BLUEBERRY PANCAKES

Blueberry Pancakes are hard to beat, and they’re even harder to mess up, especially if you use this recipe (see what we did there? Haha, marketing.) You can make your own stack of delicious pancakes in the luxury of your tiny cramped dorm room without a stovetop, which is lucky because most dorms don’t have one.

All you need is a microwave, some batter, and the ability to mix things together, and you’ve got yourself an amazing breakfast. This recipe is particularly handy if you have a guest over in the morning, and you really want to impress them without having to spend the whole time working over a hot stove.

HOW TO MAKE MICROWAVE BLUEBERRY PANCAKES

  1. Melt the butter on 50% power in the microwave for 30 seconds.
  2. Mix with water then add in pancake mix and mix well.
  3. Do not overmix the batter, it will be a bit lumpy.
  4. Sprinkle blueberries over the bowl.
  5. Microwave on 50% power for 1 minute (until the top is not wet). Eat immediately, it will deflate and become tougher as it sits.

So, it’s a well-known fact that a reheated pancake is a sad pancake. They never really turn out right, they retain a ton of moisture (which makes them super soggy), and they either burn or disintegrate when you add heat. The short answer is that, like the changing of the seasons or the flight of a butterfly, you should enjoy your pancakes in the moment and then let them go.

COST FACTOR
$: This recipe is a great opportunity to eat some fresh, homemade food without spending a ton of money to do so. Depending on whether they’re in season or not, the blueberries may be more of less expensive, depending on where you shop, so keep that in mind when you’re budgeting.

MICROWAVE TABLE

  • 1,000 watts or higher: Higher wattage, lower cook time. Our microwave is about 1,250 watts, but if you have one with about 1,000 watts you will want to cook for 1:15 after melting the butter in 30-second intervals.
  • 700 watts: Microwaves under about 900 don’t heat things evenly or consistently, so don’t go anywhere while you’re cooking. Melt the butter for 30 seconds, check it, and add more time as needed. Then microwave the pancake for 1:45.
