Microwave Quinoa Chili

Quinoa Chili is a healthy meal for when you’re feeling like hitting the gym but don’t.

Quinoa is a tasty grain that you can use to make chili even more filling. It’s really easy to make too, so you don’t have to resort to buying expensive health food. No one should have to do that.

MICROWAVE QUINOA CHILI

We’ve all been there. You get the gym membership, you get the workout leggings and a sleek, serious looking water bottle, and then end up sitting down and binge watching a show while eating caramel corn instead. There are no judgements here, this is a safe place. You can skip the caramel corn and eat a bowl of Quinoa Chili instead. It may not be the absolute healthiest thing ever, but it has quinoa in it, so that has to count for something, right?

How to make Microwave Quinoa Chili

  • Combine quinoa, salt, pepper and water in a mug, then microwave on high for 4 minutes.
  • Stir and Microwave on high for 3 minutes.
  • Stir in tomatoes, green chilis, and beans, then microwave for 2 minutes or until heated through.
  • Cover the mug with a small plate and let sit for 1 minute.
  • Season with salt and pepper to taste.

SAVE SOME FOR LATER

Cover the mug with some plastic wrap and stick it in the fridge. It will last for about a week, as long as you keep it sealed and don’t try to drink your quinoa after getting home from a party.

COST FACTOR

$: You need quinoa, salt, pepper, tomatoes, green chilis, beans, and water. You really couldn’t ask for a cheaper dinner, especially if you get the veggies and beans in cans.

MICROWAVE TABLE

  • 1,000 watts or higher: Higher wattage, lower cook time. Our microwave is about 1,250 watts, but if you have one with about 1,000 watts you will want to cook your enchilada for 4:48, then 3:36, and finally 2:24.
  • 700 watts: Microwaves under about 900 don’t heat things evenly or consistently, so don’t go anywhere while you’re cooking. Start by microwaving the chili at about 6:51, then 5 minutes, then 3:26.

Ingredients

  • 1/2 cup water
  • 1/2 can diced tomatoes
  • 2 tablespoons diced green chilis
  • 1 cup canned seasoned chili beans , with juice
  • 1/4 teaspoon salt
  • 1 pinch black pepper
