Microwave Chocolate Muffin

MICROWAVE CHOCOLATE MUFFIN    

Chocolate Muffins are not only delicious, they’re super quick and easy to make and you don’t need a conventional oven. We’ll say that again: no conventional oven needed. That means that you’re just moments away from enjoying freshly baked muffins for breakfast. They take roughly 2 minutes to cook, and they keep extremely well, so you can make them at the beginning of the week and snack on them whenever you want (which will be all the time, they’re that tasty.)

HOW TO MAKE MICROWAVE CHOCOLATE MUFFIN

  • In a mug, whisk together flour, cocoa powder, sugar, baking powder, and kosher salt.
  • Add milk, butter, and vanilla extract. Mix until smooth.
  • Sprinkle chocolate chips on top.
  • Microwave for 2 minutes, or until cake appears puffy and cooked through.

SERVE WITH

Muffins are amazing with a nice cup or coffee in the mornings, and the chocolate in these muffins compliments dark coffee perfect.ly. You can also enjoy them with your other breakfast foods, like oatmeal or eggs. 

SAVE SOME FOR LATER

As long as you keep them in a container and away from excess moisture, your muffins will stay good at room temperature up to about 3 days. They can get super stale if you leave them out without covering them, so make sure that you keep them in something that is airtight and sealable.

COST FACTOR

$: You may already have a lot of the ingredients hanging round if you cook. If you don’t really cook but want to start, you can buy the dry ingredients in bulk to save yourself money later.  

MICROWAVE TABLE

  • 1,000 watts or higher: Higher wattage, lower cook time. Our microwave is about 1,250 watts, but if you have one with about 1,000 watts you will want to cook your muffins for about 2:25 minutes.
  • 700 watts: Microwaves under about 900 don’t heat things evenly or consistently, so don’t go anywhere while you’re cooking. Bake your muffins for about 3:25 minutes.

  • 3 tablespoons flour
