MICROWAVE STRAWBERRY CHEESECAKE
There are few things in the world that are better than cheesecake. It’s creamy and delicious and a total “real adult” kind of dessert. Seriously, growing up how many cheesecakes did you get on your birthday? Probably none unless you were on a whole other level of cool and sophisticated preteen.
Usually Strawberry Cheesecake is one of those desserts you get at a fancy restaurant (really, really good with fresh berries) or in tiny slivers at a buffet (suspect at best, covered in bright red slime). It’s not often that you get to indulge in it at home, unless someone in your house is super into baking.
Well not anymore! Now you can have this decadent treat whenever you feel like it because you’re a full grown adult and have stumbled onto a recipe that lets you show it.
This may not have fresh berries or gourmet reductions that come with restaurant cheesecake, but that swirl of your favorite strawberry jam is a lot better (and more trustworthy) than whatever that all-you-can-eat place is trying to pass off as strawberry “sauce”.
HOW TO MAKE MICROWAVE STRAWBERRY CHEESECAKE
- Melt the butter for 30 seconds to 1 minute, in a cereal bowl.
- Mix in the graham cracker crumbs and pat them down into a crust.
- Microwave on half power (50% power) for 1 minute 30 seconds.
- In a cup or a second bowl, mix the cream cheese, sour cream, vanilla, sugar, and egg yolk with a fork.
- Pour it onto the crust then add in small dollops of your strawberry jam.
- Using your fork swirl the strawberry jam just a bit.
- Microwave for 2 minutes 30 seconds on 50% power.
- Put in the refrigerator until well chilled.
VARIATIONS FOR STRAWBERRY CHEESECAKE
- Crust: You know what’s better than strawberry? Chocolate and strawberry. Crush up Oreos or chocolate graham crackers instead of regular grahams for your crust.
- Jam: So maybe strawberry isn’t your jam (we’ll see ourselves out) but that doesn’t mean you have to settle for no fruit flavor. Instead, swirl in some raspberry or mixed berry jam. You could even use grape but that’s a you thing pal.
- Toppings: If you have some fresh berries, go ahead and throw them on top. Live your best cheesecake experience. Pretend you’re in a fancy restaurant with clean, real menus. Take it one step further and put some whipped cream on it.
- Lighten Up: If you are working on your fitness but still want to indulge in a post workout treat – swap in light cream cheese, light sour cream, Stevia baking sugar, and margarine.
SAVE SOME FOR LATER
This recipe is built for two, but don’t worry because it will be fine in the fridge for about 4 days. Don’t leave it unguarded too long though, a cheesecake this good is bound to attract leftover bandits.

$$: You need butter, graham crackers, cream cheese, sour cream, vanilla extract, sugar, eggs, and strawberry jam. You can find all of this at your local grocery store, and since you do need quite a few ingredients it can add up a little. But, you should treat yourself.

- 1,000 watts or higher: Higher wattage, lower cook time. Our microwave is about 1,250 watts, but if you have one with about 1,000 watts you will want to cook this recipe like this. Start by microwaving for :51, then again for 2:34, and then for 4:17.
- 700 watts: Microwaves under about 900 don’t heat things evenly or consistently, so don’t go anywhere while you’re cooking. Your cook time will be 1:45, then 2:34 and then again for 4:17.
