This recipe is the perfect way to show off your egg-making skills to your foodie friends without having to spend years in culinary school (if you’re already in culinary school, keep at it! Microwave Green Chile Scrambled Eggs are delicious, they’ve got just a hint of spice, and they only take a few minutes to assemble, so you can even make them on mornings when you’re running late.

HOW TO MAKE MICROWAVE GREEN CHILE SCRAMBLED EGGS

  1. Melt the butter in your microwave.
  2. Whisk in two eggs, milk and green chiles into your melted butter.
  3. Microwave the mixture for 30 seconds, stir, and then microwave for another 30 seconds.
  4. Season with salt and pepper and top with cheddar cheese.

SAVE SOME FOR LATER

Take whatever you have leftover, scoop it into a sealable bag or container, and put it in the fridge. Your eggs will stay good for up to 3 days, and when you’re ready to eat them just put them back in the microwave for 30-seconds, give them a stir and add more time as you need. You will want to eat them sooner rather than later since they are definitely better fresh.
